- 1 cup (250 mL) sugar
- 1/2 cup (125 mL) oil
- 2 eggs
- 2 tsp (10 mL) vanilla extract
- 1/2 cup (125 mL) all purpose flour
- 1/2 cup (125 mL) unsweetened cocoa powder
- 1 tsp (5 mL) baking powder
- 1 1/2 cups (375 mL) Craisins® Dried Cranberries
Preheat oven to 350°F (180°C). Grease and flour an 8-inch (20 cm) square pan.
Place sugar, oil, eggs and vanilla extract in a medium mixing bowl. Thoroughly combine using an electric mixer on medium speed. Add flour, cocoa and baking powder. Mix on low speed for about one minute, gradually increasing to medium speed, until dry ingredients are thoroughly combined. Add Craisins® Dried Cranberries, mixing well.
Spread batter evenly in prepared pan. Bake for 25 minutes or until a toothpick inserted into the centre comes out clean. Cool completely before cutting.
